small bag small potatoes
olive oil
kosher salt
black pepper
dill weed
Wash and dry potatoes. Cut into quarters. In baking dish, toss potatoes generously with olive oil and kosher salt, pepper and dill. Cook in a 400F preheated oven for 30 minutes.
// BBQ SALMON (you can adjust this to how many pieces of salmon you have!)
2 packages Atlantic salmon
your favorite BBQ sauce (tonight I used Signature Select/Safeway brand Southern Style Whiskey Bourbon BBQ sauce)
1 small lemon, cut into thin slices
1-2 T olive oil
1 T butter
1 T garlic powder
Wash and pat dry salmon pieces. (Cut into strips and/or remove skin if desired.)
Season salmon with garlic powder.
In skillet on medium heat, drizzle olive oil and add butter.
Place salmon pieces in and sear for 8-10 minutes.
Place sliced lemon in baking dish.
Top lemon with salmon and pour BBQ sauce over the salmon. The amount is up to you!
Cook in preheated 400F oven for 15 minutes.
